Staub's Vertical Roaster is ideal for cooking poultry and waterfowl quickly. The roasting cone is cast iron and radiates heat into the cavity of the bird. Fats drip away into the basin to produce a clean brown skin - this is especillay important when preparing duck. The cast iron vertical roaster is enameled inside and out, so there is no seasoning of the roaster required. The vertical position of the chicken helps the fat drip away, which also helps create a nice brown skin. Pour spouts on the sides allow for easy pouring off of fats.
